HOW TO: make a wedding cake

Cake making and decorating is one of my favorite things. I totally have a dream of opening a bakery some day, but until then, I satisfy my cake obsession by showing up to every party I go to with an unnecessarily fancy cake. Here's a little step-by-step on a wedding cake I made a little while back. It was for friends who got married on the water here in NYC.


1. Stock up on groceries! You'll need: 1 gallon of milk, 13 pounds of butter, 3 containers of poppy seeds, 9 dozen eggs, 20 pounds of sugar and 15 pounds of flour.
NOTE: If you live on a fifth-floor walkup, as I did when I made this monster, Fresh Direct is highly recommended!


2. Bake the cakes and cover them with fondant. Add blue fondant trim and pipe royal icing dots. Stash them in the fridge.
NOTE: Be sure to eat everything in your fridge--except a few choice items which can squish along the sides of the shelves--before this step.


3. Stack the cakes once you arrive at the wedding location.


4. Add the cake toppers, if using.

5. Go enjoy a a stiff drink!

Wow, that's an impressive cake! How did you get it DOWN the five flights? That must have been scary!

It sure was scary... I had to enlist a big strong friend and he was terrified of dropping it! :)

Hey MCR are you available for hire? My friend is having a birthday party and I would love to wow them with a custom cake but sadly do not have the time or talent to try something as crazy as what you can do. What's the going rate for a custom birthday cake?
